The buzz about Moroccan cuisine just gets bigger and bigger. But if you haven’t tried it in your own kitchen, The Moroccan Collection is a good place to start.
It has what I think are two key ingredients to encourage people to give the recipes a go. They look simple and approachable and most are accompanied by an incredibly appetising photograph.
The recipes cover a wide range of dishes from simple classics such as
vegetable couscous and chicken with lemons and olives to the more exotic b’stilla, the sometimes daunting preparation of which has been modified to a much simpler version.
This straightforward book doesn’t cover the rich and colourful history of North African cooking the way many do. But for an easy-to-use introduction to Moroccan cuisine you can’t go wrong. All the ingredients are readily available, with such exotica as ouarka being replaced with filo pastry.
