
Anathoth
Kaye and Owen Pope are on the way to becoming New Zealand’s first raspberry jam magnates. Their business, Anathoth, has grown from a few jars of raspberry jam made by Kaye to sell at the Nelson market, to a booming enterprise employing about 20 people, and making about one third of all the raspberry jam sold in this country. And, despite their success, the Popes are keen to ensure their products retain the hand-made qualities that made them a winner in the first place.
Their recipe is based on the tried and true Edmonds Cookbook version, which uses equal quantities of fruit and sugar, boiled briefly to retain its colour and stirred while cooling to aid its set. The jam is made in small 10-pot batches (each pot is 475g), using only the Popes’ own raspberries grown at Anathoth, their property at Upper Moutere.
To achieve the most flavoursome jam, Kaye and Owen tested 36 varieties of raspberry, and eventually selected ‘Marcy’ as the best. Although raspberry is Anathoth’s flagship jam, they also make other ‘home-made style’ preserves. As with their raspberry jam, to ensure the best fruit for their apricot jam, they grow the fruit on their Central Otago orchard.
