Nick Honeyman, co-owner of Paris Butter in Auckland, is a remarkable ambassador for New Zealand’s culinary scene, dedicated to showcasing our country’s premium ingredients and food story across the globe. Originally opening Paris Butter as a bistro, Nick – alongside co-owner and chef Zennon Wijlens – has transformed his original restaurant concept into a creative fine-dining establishment that has risen to threehat status in the Cuisine Good Food Guide presented by American Express in 2025. His influence is further enhanced by his involvement with his restaurant Le Petit Léon nestled in the enchanting village of Saint-Léon-sur-Vézère in France. Having honed his skills in prestigious French kitchens such as L’Astrance and L’Arpège, Nick’s culinary journey so far has culminated in achieving his first Michelin star for Le Petit Léon, fulfilling a lifelong dream. With the support of his wife, Sina, who serves as the restaurant manager and sommelier, they have positioned themselves among the elite, being one of only 52 restaurants in France to receive this esteemed accolade, and by association Nick’s outstanding work draws a global eye to our New Zealand restaurant industry. He actively promotes Aotearoa as a premier global dining destination, and his commitment to excellence and innovation makes him an exemplary representative of New Zealand’s vibrant culinary landscape.
