Whatever the weather, there is – literally – a warm welcome at Botswana, with roaring log fires both inside and out. The Queenstown stalwart is meat-predominant, but due recognition is given to the pescatarians and vegetarians among us. The team believes that fantastic produce should be left alone enough to reflect its quality on the plate. Speciality cuts are individually identified by source: it may be wild Fiordland red deer tartare for starters; or how about slow-roasted whole lamb shoulder (from Royalburn in Arrowtown) as a main?
