Salads aren’t only for summer. Even though we associate winter with comfort food such as nourishing soups, baked pastas, hearty stews or a stick-to-your-ribs Sunday roast, the reality is we still need to eat our vegetables, served either warm or at room temperature. The winter salads to follow, many of which contain grains and nuts, add a heartiness and crunch that work well in the winter months. Right now winter vegetables are in full force and a vibrant winter salad, full of winter’s best produce, is the perfect way to show them off.
