Twenty-five years on and Steve Logan and Shaun Clouston are still leaders in the pack. Their consummate craftsmanship reveals itself through a menu designed as a veritable feast of contemporary food that focusses on local produce and ingredients sourced from the best farmers, growers and fishers throughout the motu. While Clouston’s cooking is based in the classics, there is clear seasonality elevated by his willingness to experiment. Delve into turkey and porcini arancini with pickled cherry and arugula pesto, or opt for aromatic duck confit playfully paired up with toffee apple. While service formality has softened over time, the grandeur of the former banking chamber has never dimmed. Nor has the quality of the drinks list which is regularly updated and stands as a respected motif of the brand.
