Ingredients

40g butter
½ cup condensed milk
1 x 450g pack Well & Truly Make-at-home Vitality Bars
250g ready-to-eat dried apricots (the moist kind)

Instructions

1.Put the butter and condensed milk in a saucepan.
2.Heat over a medium heat, stirring constantly, and bring to just bubbling, then reduce to a simmer and cook, stirring, for 2 minutes.
3.Add the vitality bar mix and stir through over the low heat for 3-4 minutes.
4.Remove from the heat and cool for 10 minutes.
5.Chop the dried apricots very finely – this is best done in a food processor as you want it almost paste-like to help stick the balls together.
6.Add to the cooled mix and stir well with a metal spoon to distribute the apricots evenly.
7.Using your hands, form the mixture into walnut-sized balls, pressing the mixture firmly together.
8.Store in an airtight container in the fridge for up to 3 weeks.
