Carrots With Kombu & Garlic

200g picklesIngredients
| 200g multicoloured carrots (or orange) | |
| 1 tablespoon soy sauce | |
| 1 tablespoon mirin | |
| 1 tablespoon rice vinegar | |
| 3g dried kombu | |
| 1 garlic clove, crushed |
NOTE
All pickles will keep for 3 days in the refrigerator.

Instructions
| 1. | Peel the carrots and cut into sticks. |
| 2. | Mix them with the remaining ingredients in an airtight container. |
| 3. | Marinate for at least 30 minutes in the refrigerator before eating. |
