| 200g butter | |
| 175g sugar | |
| 1 egg | |
| 100g flour | |
| 1 teaspoon baking powder | |
| pinch of salt | |
| 110g chopped pistachio nuts | |
| 100g desiccated coconut | |
| 80g coconut thread |
Light, crunchy and perfect with a long black or pot of leaf tea. This is a brand-new recipe developed specially for Cuisine.
Instructions
| 1. | Beat the butter and sugar together until fluffy and pale. |
| 2. | Add the egg and beat until fully incorporated. |
| 3. | Add flour, baking powder, salt, pistachio and both types of coconut. |
| 4. | Mix until the dough comes together. |
| 5. | Take heaped tablespoons of dough and roll into balls (you should get approx 32 balls), and flatten slightly between your palms. |
| 6. | Place on a lined tray, allowing room to spread. |
| 7. | Bake at 160°C fan for 20 minutes turning the tray halfway through cooking. |
