200g butter
175g sugar
1 egg
100g flour
1 teaspoon baking powder
pinch of salt
110g chopped pistachio nuts
100g desiccated coconut
80g coconut thread

Light, crunchy and perfect with a long black or pot of leaf tea. This is a brand-new recipe developed specially for Cuisine.


1.Beat the butter and sugar together until fluffy and pale.
2.Add the egg and beat until fully incorporated.
3.Add flour, baking powder, salt, pistachio and both types of coconut.
4.Mix until the dough comes together.
5.Take heaped tablespoons of dough and roll into balls (you should get approx 32 balls), and flatten slightly between your palms.
6.Place on a lined tray, allowing room to spread.
7.Bake at 160°C fan for 20 minutes turning the tray halfway through cooking.
