100ml burnt-lime vinegar (see recipe for egg & shallot salad with burnt-lime vinegar dressing)
100ml rum
1 tablespoon white sugar
a thumb-sized piece of ginger, thinly sliced soda
lime slices, to serve


1.Put the vinegar, rum, sugar and ginger in an ice-filled cocktail shaker.
2.Shake for 30 seconds.
3.Strain into glasses.
4.Top with ice, soda and lime slices.
