1 potato, thinly sliced in rounds
5 uncooked pizza bases
2 leeks, sliced into matchsticks
extra virgin olive oil
1 cup shaved parmesan
zest of 1 lemon

1.Place the potato rounds onto the pizza bases followed by the leek and a drizzle of good olive oil.
2.Cook for 5-7 minutes or until the bottom of the base is crisp.
3.Once cooked, sprinkle the pizza generously with shaved parmesan and lemon zest.
