| 17g lemon thyme | |
| 100ml neutral vodka | |
| LEMON THYME MARTINI | |
| ice | |
| 60ml Roots gin | |
| 20ml Prophet’s Rock white vermouth | |
| 5ml lemon thyme infusion | |
| lemon coin or peel, to garnish |
A bright, savoury take on the classic martini, this cocktail balances the clean botanicals of gin with aromatic vermouth and a fragrant lemon thyme infusion. Elegant and understated, it’s a crisp aperitif that showcases beautifully balanced flavours. If you can’t find fresh lemon thyme at your local supermarket, garden centres are a great resource and it’s very easy to grow at home.

Instructions
| 1. | LEMON THYME INFUSION |
| 2. | Put the lemon thyme in a clean glass jar or airtight container. |
| 3. | Pour over the vodka, seal and leave to infuse for 18-24 hours, shaking the jar several times. |
| 4. | Strain through a fine sieve or muslin into a clean bottle or jar. |
| 5. | This makes enough for 20 martinis – store in the fridge until required. |
| 6. | LEMON THYME MARTINI |
| 7. | Fill a mixing glass with ice. |
| 8. | Add the gin, white vermouth and lemon thyme infusion. |
| 9. | Stir for 20-25 seconds until well chilled and properly diluted. |
| 10. | Strain into a chilled martini glass and garnish with a lemon coin or a twist of lemon peel. |
| 11. | Serve immediately. |
| 12. | OPTIONAL |
| 13. | For an extra salty tang (or to make it ‘dirty’), add ½ teaspoon of olive brine to the mixing glass before stirring. |
