Lime Cola Kefir Soda with Pineapple & Rum

| ½ fresh pineapple, cut into small pieces, plus 4 pineapple wedges to garnish | |
| 240ml rum (or use tequila or vodka) | |
| 3-4 bottles The Wild Fermentary Lime Cola Kefir Soda | |
| lime slices, to serve |
The Wild Fermentary Lime Cola Kefir Soda is a delicious pick-me-up at any time of day. The collab with Six Barrel Soda results in an authentic cola taste which is perfect for a summer drink when combined with rum, tequila or vodka. I like to make an extra-special cocktail using rum-soaked frozen pineapple pieces – make sure you use a long skewer to secure the garnish, then you can spear and eat the pineapple pieces.
Instructions
| 1. | Put the small pineapple pieces into a container and pour over 120ml rum. |
| 2. | Leave to marinate for 30 minutes before freezing for at least 6 hours (or up to a week). |
| 3. | To serve, break the frozen pineapple into pieces and divide between four tall glasses. |
| 4. | Add a shot of rum to each glass and top up with the lime cola. |
| 5. | Garnish with pineapple wedges and lime slices. |
