Ingredients

½ fresh pineapple, cut into small pieces, plus 4 pineapple wedges to garnish
240ml rum (or use tequila or vodka)
3-4 bottles The Wild Fermentary Lime Cola Kefir Soda
lime slices, to serve

The Wild Fermentary Lime Cola Kefir Soda is a delicious pick-me-up at any time of day. The collab with Six Barrel Soda results in an authentic cola taste which is perfect for a summer drink when combined with rum, tequila or vodka. I like to make an extra-special cocktail using rum-soaked frozen pineapple pieces – make sure you use a long skewer to secure the garnish, then you can spear and eat the pineapple pieces.

Instructions

1.Put the small pineapple pieces into a container and pour over 120ml rum.
2.Leave to marinate for 30 minutes before freezing for at least 6 hours (or up to a week).
3.To serve, break the frozen pineapple into pieces and divide between four tall glasses.
4.Add a shot of rum to each glass and top up with the lime cola.
5.Garnish with pineapple wedges and lime slices.
