2 ripe mangoes
1 cucumber
¼ red onion
juice of 1 lime
½ cup Greek yoghurt
¼ cup smoked chilli sauce (I use Hoot Smoked Chilli sauce or Native Kitchen Crispy Chilli Oil)
1 bunch mint leaves
extra virgin olive oil

This mango and mint salad is super easy and so tasty – with only a handful of ingredients it comes together in minutes and is so refreshing. If you are not a fan of heat, simply leave out the smoky chilli sauce – it’s just as delicious!

1.Peel and dice the mango into large chunks.
2.Deseed the cucumber and dice into chunky pieces.
3.Slice the red onion into rounds and cut in half.
4.Arrange the mango, cucumber and red onion on a serving dish and squeeze over the lime juice.
5.Dollop over the Greek yoghurt and smoked chilli sauce.
6.Finish with mint leaves and a drizzle of good-quality olive oil.
