50ml sotol (we recommend La Higuera Sotol Dasylirion, Leiophyllum)
30ml fresh lime juice
15ml agave syrup
a dash grapefruit bitters
salt and fresh lime wheel, to serve
dehydrated or fresh lime wheel, to garnish

A twist on the classic margarita using sotol, an agave spirit from northern Mexico.

1.First, prepare a chilled tumbler by rubbing half the rim with a lime wheel and gently rolling in salt.
2.Add the sotol, lime juice and agave syrup to a cocktail shaker filled with ice and shake vigorously.
3.Pour the contents directly into the tumbler.
4.Add a dash of grapefruit bitters. Garnish with a dehydrated or fresh lime wheel.
