Ingredients

85g mayonnaise
1⁄2 head broccoli, cut into florets
125g purple cabbage, shredded
1 carrot, peeled, shaved into ribbons
1 packet ramen noodles, uncooked, broken into pieces (we used Yum Yum brand)
1⁄2 lime, cut into 6 wedges, to serve
MAYONNAISE
1 egg yolk
250ml grapeseed oil

Instructions

1.TO MAKE THE MAYONNAISE
2.Whisk the oil into the egg yolk, starting slowly with drips of oil until it is creamy and blended.
3.TO MAKE THE SALAD
4.Combine the mayonnaise with the seasoning sachet from the packet of ramen noodles (and if your brand includes an oil sachet add the oil, too).
5.Add the mayonnaise to all the other ingredients except the lime in a bowl and toss to mix thoroughly.
6.Serve with the lime wedges.
