| 3 Lebanese cucumbers, finely diced | |
| 4 tomatoes, finely diced | |
| 1 small red onion, finely diced | |
| 1 teaspoon dried mint | |
| 125ml verjuice (or use 3 tablespoons lime juice) |
Instructions
| 1. | Put the cucumbers, tomatoes, red onion and mint in a bowl and pour over the verjuice. |
| 2. | Leave to stand for about 5 minutes then season with salt and pepper to taste. |
