SIMPLE TOMATO SALAD

| 600g ripe tomatoes | |
| 1 tablespoon extra virgin olive oil, plus extra to drizzle | |
| 1 handful basil leaves |
Instructions
| 1. | Cut the tomatoes into different-sized slices and chunks, removing the core. |
| 2. | Place them into a bowl and sprinkle with sea salt, leave to sit for 10 minutes. |
| 3. | Add 1 tablespoon of olive oil and toss together. |
| 4. | Arrange the tomatoes in a serving bowl, roughly tear the basil leaves and scatter over the top. |
| 5. | Drizzle the remaining olive oil over and season with a touch more salt. |
