Ingredients

600g ripe tomatoes
1 tablespoon extra virgin olive oil, plus extra to drizzle
1 handful basil leaves

Instructions

1.Cut the tomatoes into different-sized slices and chunks, removing the core.
2.Place them into a bowl and sprinkle with sea salt, leave to sit for 10 minutes.
3.Add 1 tablespoon of olive oil and toss together.
4.Arrange the tomatoes in a serving bowl, roughly tear the basil leaves and scatter over the top.
5.Drizzle the remaining olive oil over and season with a touch more salt.
