SPICY SALT & VINEGAR POTATO CHIPS

| 1 tablespoon white sugar | |
| 1 teaspoon citric acid | |
| 1 teaspoon salt | |
| ½ teaspoon cayenne pepper | |
| ¼ teaspoon smoked paprika | |
| 3 Agria potatoes | |
| ¼ cup apple cider vinegar | |
| neutral oil for frying |
Instructions
| 1. | Mix together the sugar, citric acid, salt, cayenne pepper and paprika to make the seasoning for your chips. |
| 2. | Wash and slice potatoes to about 1mm thickness – a mandolin is a very handy tool here. |
| 3. | Cover with water, add apple cider vinegar and soak for at least 30 minutes. |
| 4. | Drain water from potatoes and pat dry. |
| 5. | Pour oil into a large pot and place over a high heat. |
| 6. | Once oil reaches 190°C, carefully drop in potato slices. |
| 7. | Cook in batches until crisp – about a minute and a half – then drain on paper towels before transferring to a large bowl and tossing in seasoning. |
