Ingredients

SALSA
½ cup fresh strawberries, diced
â…“ cup tomato, diced
â…“ cup red onion, finely chopped
2 tablespoons red chilli, finely diced
¼ cup fresh coriander, chopped
zest of 1 lime
2 tablespoons lime juice
salt and freshly ground black pepper, to season

Combine these two fruits with a kick of
spice to create the ultimate summery
medley. It’s divine over grilled white
fish, paired with a smooth avocado
mousse to mellow the heat!

Instructions

1.Place all ingredients into a bowl and gently mix.
2.This is great served with grilled white fish (we love to use kingfish from Yellow Brick Road) and an avocado mousse made by blending the flesh of an avocado with a tablespoon each of lime juice, lemon juice and olive oil and a clove of garlic, seasoned well with salt and pepper.
3.To serve, swipe a dollop of avocado mousse across a plate.
4.Top with the grilled fish and spoon the strawberry salsa over. Garnish with freshly chopped parsley.
