STIR-FRIED BOY CHOY & SHIITAKE MUSHROOMS

| 800g boy choy (also known as bok choy) | |
| 11⁄2 tablespoons oil | |
| 5g fresh ginger, sliced | |
| 120g shiitake mushrooms, sliced | |
| salt to taste | |
| sugar to taste | |
| a pinch of chicken powder (I used Knorr brand) |
Button mushrooms are also good company for the boy choy in this dish.
Instructions
| 1. | Separate the leaves of the boy choy, then wash and dry them. |
| 2. | Cut into 3cm lengths. |
| 3. | Heat the oil and fry the ginger for a few seconds until aromatic. |
| 4. | Add the boy choy and fry for a few minutes over a high heat. |
| 5. | Add the mushrooms. |
| 6. | Add salt and sugar and stir until the boy choy is cooked, about 6 minutes if you like it crunchy, or 10 minutes for soft. |
| 7. | Sprinkle with chicken powder and serve. |
