Ingredients

800g boy choy (also known as bok choy)
11⁄2 tablespoons oil
5g fresh ginger, sliced
120g shiitake mushrooms, sliced
salt to taste
sugar to taste
a pinch of chicken powder (I used Knorr brand)

Button mushrooms are also good company for the boy choy in this dish.

Instructions

1.Separate the leaves of the boy choy, then wash and dry them.
2.Cut into 3cm lengths.
3.Heat the oil and fry the ginger for a few seconds until aromatic.
4.Add the boy choy and fry for a few minutes over a high heat.
5.Add the mushrooms.
6.Add salt and sugar and stir until the boy choy is cooked, about 6 minutes if you like it crunchy, or 10 minutes for soft.
7.Sprinkle with chicken powder and serve.
