BAKING CLASSICS ARE WOVEN WITH A UNIQUE KIWI FLAVOUR IN THESE RECIPES BY MAXINE SCHECKTER.
With these cakes and desserts I wanted to give you a twist on classic Kiwi pastries, but also go a bit deeper and explore the concept of New Zealand, the land and sea around us. For me, the North Island with its big cities – especially Wellington – is fresh and bright with a buzz, which gave me the vibe for the strawberry kawakawa pavlova.
The South Island comes through in the kūmara ginger slice, as warm and earthy as the land. Not forgetting the sea that surrounds us all, I’ve finished with the brightness of the ocean, with my spin on a Jelly Tip, light like the foam of the waves.
