This is probably one of Claudia Roden’s lesser-known books, however it is one of my favourites of hers. It’s as much a book on the cultural significance of food in Spain – the ingredients, the regions and the specialities – as it is a recipe book. It’s a cookbook that you should read before you begin cooking, as to get the best out of it you have to understand what goes with what and, more importantly, why.
