Southern Hive
A poetic, golden-hued reflection of nature’s precision. This bright, layered cocktail blends bee pollen-infused sake, native Tarata distillate, yuzu juice and The Southerly, evoking the vitality of a southern bloom in full flight.
Firstly I combined the whisky-infused Mānuka Honey with Tarata distillate, sake and yuzu. Then it’s shaken with ice and strained into a chilled yellow coupe glass. Each sip delivers floral complexity, warm acidity and a refined sweetness that is both comforting and invigorating.

Southern Current
Southern Current is a coastal odyssey, sparkling, bracing and deeply grounded in New Zealand’s southern waters.
New Zealand single malt vodka adds mineral depth and clarity, its barley kissed by maritime air.
The roasted earthy Hōjicha tea tempers the sweetness of the whisky-infused Mānuka Honey, while bergamot adds acidity.
Topped with south sea foam, a delicate blend of sea salt and the gorgeous flavours of the honey, the cocktail finishes with a honeyed kiss that lingers like ocean spray on sun-warmed skin.
