Blue Gum Duo
A light, floral and rich duo celebrating the abundance of seeded fruit, wild herbs and otherwise overlooked flora that thrive along the Motueka River.
A layered cocktail combining Elsewhen Applejack, whisky-infused Mānuka Honey, cold-distilled wild celery and preserved apple to evoke the depth and wildness of the Blue Gum swimming hole that the drink is named after. Pour it over large-format ice in a frozen rocks glass and garnish with a slice of honey-preserved apple.
“The Southerly has this incredible duality, sweet, herbal and rich, all in one pour. It’s more than a sweetener, it’s a complete flavour enhancer. I wanted to create a drink that captured the essence of where I’m from and whisky-infused Mānuka Honey helped make that expression seamless.”

Hydrowine
A fun hydromel project nicknamed Hydrowine which uses a speed aeration method to oxidate both the wine and honey and aid in the initial fermentation.
We combined naval orange, Mānuka Sauvignon Blanc, chestnut tanin, juniper and The Southerly.
To showcase the delicious extravagance of the whisky-infused Mānuka Honey, we incorporated mainly local citrus, wine and spices to build a herbaceous and light-bodied mead.

Blackdog
A bright and crisp build on the classic salty dog cocktail with seasonal golden grapefruit juice and its incredible likeliness to Koji in the way it plays in flavour and aroma throughout multiple treatments, distillation and combinations.
“It’s peppery and sweet whilst also being balanced, which lends itself incredibly well to the whisky-infused Mānuka Honey.”
