I absolutely love anchovies and consider them a pantry essential. A few chucked in a salad or pasta, or just on buttered bread (like the Italian staple burro e acciughe) is enough to make me happy! At home, my Italian partner makes me toast with parsley, butter, anchovies and lemon zest, and at work Alfie Ingham (head chef at Hugo’s) makes me these delicious snacks.
Salty, spicy, tangy and crunchy – what is there not to like about this salsa. It’s perfect to sprinkle over simple pan-fried fish, it lifts up mild-flavoured salads and cheeses and it’s also perfect for throwing in the oven with a chicken tray bake. Olives, anchovies and garlic make a very punchy under-the-skin stuffing for chicken. I have used leg and thigh pieces, but you could also use a whole chicken or a butterflied bird for the barbecue. Ajvar or acvar is a sauce/relish made with red capsicums. This recipe is from a version I ate in Istanbul which also included eggplant.
