Button mushrooms are also good company for the boy choy in this dish.

One of my all-time favourite dishes, mapo tofu is already a great example of a ‘less meat’ dish balanced with tofu. I like to cut that amount down even further using lots of chopped mushrooms for maximum taste and texture. I am using lean venison mince, but you could substitute any type of mince.
My mum used to make a thick mushroom stew, flavoured with a little miso or often Vegemite (!), which she would serve on brown rice. I’ve taken the memory of that stew and dialed up the flavour with a punchy spring onion and ginger sauce.
One for the vegetarians – although I notice that the meat eaters don’t hold back either. Most of this dish can be prepared ahead and reheated before adding in the cheese and walnuts.
