1 orange
1 tablespoon elderflower cordial
80ml Campari
prosecco or sparkling wine

A twist on the classic Champagne cocktail, with frozen orange and elderflower cubes to keep the drink nicely chilled. Decorate glasses with candied orange or remove strips of fresh rind before cutting off the pith for the orange ice cubes.

1.Slice the top and bottom off the orange and slice off all the pith.
2.Cut the orange flesh into 8 pieces and place in a plastic container that will fit the pieces in one layer.
3.Drizzle over the elderflower cordial.
4.Place in the freezer for an hour then stir around and freeze again until needed.
5.To serve, put an orange piece in each glass, add 10ml of Campari then top up with prosecco or sparkling wine to taste.
