3 Lebanese cucumbers, finely diced
4 tomatoes, finely diced
1 small red onion, finely diced
1 teaspoon dried mint
125ml verjuice (or use 3 tablespoons lime juice)


1.Put the cucumbers, tomatoes, red onion and mint in a bowl and pour over the verjuice.
2.Leave to stand for about 5 minutes then season with salt and pepper to taste.
