Spring On A Plate
One of the dishes that caught our eye at the newly opened Cassia is the new tandoori chicken xacuti. The Goan-inspired aromatic curry pairs smoky tandoori chicken with fragrant xacuti, featuring cassia, black pepper, star anise and dried red chillies. It’s a standout among the new and returning dishes on the menu at Cassia, bringing fresh flavour to the restaurant’s latest chapter.
Go Green
These recipes are making the most of spring’s greenest arrivals. Ginny Grant has a fantastic collection of green dishes lined up for the season, from smoked duck-breast salad with green beans and peanuts to cashew, coconut and pea curry, plus asparagus and lentil salad with hemp-seed parsley pesto.
Think Pink
Our spring rosé pick is Bijou Terre de Providence Rosé, a bottle that deserves a place on the spring table. “The rockmelon, pear, lime, and fig fruit stamp is interwoven with citrus blossoms and lovely phenolics that give the wine texture, grip, and a really decent length during which everything comes together in perfect harmony.”
