4 baby cucumbers or 1 telegraph cucumber, thinly sliced
1 ball mozzarella or cherry mozzarella, thinly sliced
2 tablespoons chopped chives
1 tablespoon lemon juice
2 tablespoon extra virgin olive oil
a few drops of hot sauce

You don’t really need a recipe for this but sometimes it’s good to be reminded how dazzling the combination of a hot sauce with cool cucumber and creamy mozzarella is. Vary the herbs to what you have to hand.

1.Arrange the cucumber and mozzarella on a platter.
2.Combine the chives, lemon juice and olive oil.
3.Drizzle over the cucumber and mozzarella and season with salt.
4.Add drops of hot sauce to taste.
