2 tablespoons olive oil
3 cloves garlic, sliced
200g oyster mushrooms
a squeeze of lemon juice
¼ cup soft herbs such as dill, chervil, mint
1 teaspoon sumac

1.Heat the oil in a frying pan over a medium heat.
2.Add the garlic and fry for about 30 seconds.
3.Add the mushrooms and a sprinkle of salt and some pepper and cook for a few minutes until just starting to wilt.
4.Squeeze over a little lemon juice.
5.Pile onto the pizza base and top with fresh herbs and a sprinkle of sumac.
